Protein Powder for Baking: Which One, and How Much Without Drying It Out

Which protein powder works for baking, how much to add, and how to keep the bake from drying out.

Low-calorie protein cinnamon rolls

Protein powder raises the protein in a bake, but too much of it dries the bake out.

Which powder

  • Whey - clean taste. Good for short bakes.
  • Casein - keeps moisture. Good for cold desserts.
  • A whey-casein blend - works in most bakes.
  • Plant-based - needs extra liquid.

How much

Up to 20% of the flour. For 100 g of flour, up to 20 g of powder.

So it doesn't come out dry

  • Add moisture: yogurt, milk or egg white.
  • Flavored powder is already sweet - cut back on the sweetener.
  • Don't overmix once it's in.
  • Take it out of the oven a little early.

More powder isn't better. Past 20%, the cake turns into a biscuit.

Example

A cake with 200 g of flour: take out 40 g of flour, add 40 g of powder, plus 2-3 tablespoons of yogurt.

Can I replace all the flour with protein powder?

No. Without flour there is no structure, and it bakes dry and rubbery. Up to 20% of the flour.

Which powder is best for cakes?

A whey and casein blend. Whey alone dries out faster in the oven.

Why is my protein cake dry?

Too much powder, not enough moisture, or it baked too long. Take it out a little early.
