For the dough
80 grams of white flour
80 grams of wholemeal flour
200 grams of yogurt pro 0% fat
5 grams of dry yeast
1/2 teaspoon of baking soda
For the cheese mixture
160 grams of grated 9% yellow cheese
60 grams of Bulgarian cheese 5%
60 grams of cottage cheese 3%
4 crushed fresh garlic cloves
2 teaspoons chopped fresh za'atar (can be replaced with other herbs/without)
Method

Step 1: Mix the dry dough ingredients
Step 2: Add the yogurt and knead until a uniform dough is obtained
Step 3: Cover to rise for an hour - an hour and a half
Step 4: Divide the dough in half, and roll each one to the size of an A4 page
Step 5: Put about half of the cheese mixture on each sheet of dough
Step 6: roll into a roll from the short direction so that the roll comes out short and with lots of rolls
Step 7: Using dental floss, cut each roll into 12 pieces
Step 8: Transfer to a mold to rise for an hour - an hour and a half
Step 9: Heat the oven to 180°C fan
Step 10: Bake for 12 minutes
