Nutrition and cuttingMayo Substitute: Why Mayo Is So High in Calories, and What to Use Instead
A spoonful of mayo is mostly oil. How to get the same creamy texture for far fewer calories.
By Ofri Lahad·3 min read·Last updated: A tablespoon of regular mayo is about 90 calories, almost all of it oil.
My version
Hard-boiled eggs, water thickened with a little xanthan, vinegar and mustard. Blend until smooth. It comes to 90 calories per 100 g.
To get it right
- Everything at room temperature.
- Blend in a narrow container so the blade covers all the liquid.
- Add the xanthan gradually so it doesn't clump.
Where to use it
- Tuna salad or egg salad.
- Sandwiches and wraps.
- As a dip.
The comparison
- 100 g of regular mayo - about 700 calories.
- 100 g of my version - about 90 calories, with more than 7 g of protein.
No xanthan?
Use 2 g of cornstarch instead: mix it into the water, microwave until it bubbles and thickens, and cool it before blending.
How many calories are in a tablespoon of mayo?
Regular mayo is about 90 per tablespoon. The low-calorie version is about 15.
Why did my mayo come out runny?
Probably not enough thickener, or the blender jar is too wide for the blade to catch all the liquid. Add a pinch of xanthan and blend again.
Can I make it without eggs?
The hard-boiled eggs give it the creamy texture and the protein, so they stay in this version.
