  1. Mix the soy sauce, sesame oil and drops of sweetener in a bowl, and soak the chicken fillet in them for at least half an hour, and overnight in the refrigerator is possible.

  2. Heat a pan with oil spray and grill the chicken fillet until it is nicely seared on both sides.

  3. Prepare the peanut sauce: mix the PB2, soy sauce, sesame oil, hot water, drops of sweetener and lemon juice in a small bowl, and add the grated garlic and ginger if using, until a smooth sauce.

  4. Cut the cucumber, carrot and kohlrabi into juliennes (thin sticks), slice the avocado, and cut the green onion into several long pieces.

  5. Moisten only the upper side of the rice sheets, under the tap or in a plate with water, and place them on the work surface partially overlapping. That way they don't stick to the surface and stay crispy and not in the texture of a jellyfish.

  6. Place the 2 iceberg leaves on the sheets, and arrange the vegetables, avocado, coriander leaves and chicken inside.

  7. Fold the lettuce around the filling, and roll the rice sheets tightly around it.

  8. Wet the knife for a clean and smooth cut, cut the roll in half, and serve with the peanut sauce for dipping.
