  1. Wash the glutinous rice in a bowl with water, mix with your hands and filter, repeat the process several times until the water is almost clear

  2. Cook the glutinous rice with water (2:1 ratio - water to rice) and a little salt until the grains become soft and sticky

  3. Let the rice cool for a few minutes so that it is comfortable to work with

  4. Spread the rice in an even layer on the tray

  5. Freeze for half an hour until the rice freezes

  6. Cut into small neat cubes

  7. Spray some oil spray on the cubes

  8. Place in the air fryer at 200°C for 10 to 20 minutes until the cubes become crispy

  9. Meanwhile, mix avocado with some salt and lemon

  10. When the cubes are ready, put some avocado on each cube

  11. Cut the tuna thinly and mix with spicy mayonnaise, then put some on top of the cubes

  12. Drizzle a small dot of spicy mayonnaise

  13. Place a small slice of thinly sliced red chili on top (optional)

Small tips that make a difference

  • Chill the rice completely before cutting — warm rice will crumble.
  • Press the rice firmly into the tray so the cubes hold their shape.
  • Assemble the tuna and avocado right before serving to keep the crunch.

Frequently asked questions

Can I make the rice cubes ahead?
Yes. Prepare the rice base a day ahead and refrigerate it, then air fry just before serving.
Do I need an air fryer?
No. You can sear the cubes in a pan with a little oil spray, but the air fryer gives a more even crispness with less oil.
Can I use canned tuna?
You can, but the texture is different. For the closest result to a restaurant version, use fresh sashimi-grade tuna.
