200 gram Tuna tartare (A piece of fresh sushi-grade tuna)
40 gram green apple
40 gram plum
5 stems Thin green onion or chives
1/4 unit Chili pepper
1 teaspoon lemon zest
5 singularity Chili rings for serving
Method
Check off steps while cooking so you keep the flow.
Cut the tuna into small, uniform cubes and transfer to a cold bowl.
Cut the green apple and the plum into cubes the same size as the tuna cubes.
Finely chop the green onion and a quarter of the chili pepper.
Add the apple, plum, green onion and chopped chili to the tuna bowl.
Add 80 grams of the Asian aioli and gently fold until everything is coated, without crushing the tuna.
Spread 20 grams of the aioli in a long strip on a slate tray or oblong plate.
Arrange the tartare along the aioli strip into a uniform, raised strip.
Grate lemon on top, scatter the chili rings and serve immediately when the dish is cold.
