Method
Check off steps while cooking so you keep the flow.
Crush the garlic and chili in a mortar and pestle (or in a bowl) and add the lemon, fish sauce and sweetener and mix
Add the papaya and carrots (cut into juliennes) to the bowl and let them absorb all the flavors of the sauce
Add the yardlong beans (4 cm pieces) and the cherry tomatoes and give them small blows to combine flavors.
Sprinkle peanuts on top, and enjoy!
Small tips that make a difference
- Bruise the tomatoes and yardlong beans lightly so they soak up the dressing.
- Make the dressing separately and taste it before mixing everything together.
Frequently asked questions
- Where do I buy green papaya?
- In Asian grocers and larger markets. If you cannot find it, grated kohlrabi or a carrot and white cabbage mix work well.
- Can I make it ahead?
- You can cut the vegetables and make the dressing a day ahead, but mix only before serving to keep everything crisp.
- How spicy is the salad?
- The heat is set entirely by the amount of chilli. Leave it out for a tangy, refreshing salad.
